Ingredients

  • 3 egg whites
  • 25 Ritz crackers
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • 1 cup chopped pecans

Instructions

  1. Crack and separate eggs while they are cold.
  2. Let the egg whites stand until they reach room temperature.
  3. Beat egg whites until stiff peaks form.
  4. Gradually add sugar and baking powder to the egg whites.
  5. Continue beating until all sugar is incorporated and egg whites form peaks.
  6. Gently fold in crushed Ritz crackers and chopped pecans into the egg white mixture.
  7. Pour the mixture into a greased pie pan.
  8. Bake at 350°F (175°C) for 25 to 30 minutes.
