- Preheat oven to 350°F and grease a large cookie sheet.
- In a large bowl, combine flour, sugar, baking powder, anise seed, sliced almonds, and salt. Blend using an electric mixer on low speed.
- In a separate bowl, whisk together eggs and vanilla extract.
- With the mixer running, slowly pour the egg mixture into the dry ingredients and mix just until the dough comes together. Do not overmix.
- Divide the dough in half and shape each half into a 12 x 2-inch log.
- Place the logs on the prepared cookie sheet and bake for 30 minutes or until slightly risen and firm to touch.
- Remove from oven and cool the logs on a wire rack for 15 minutes.
- Transfer logs to a cutting board and using a serrated knife, cut diagonally into 1/4-inch slices.
- Arrange the slices in a single layer on the cookie sheet and bake for 10 to 13 minutes or until crisp and golden.
- Cool the biscotti on the cookie sheet and store in a covered container.
