Ingredients

  • 2 1/2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 2 teaspoons anise seed
  • 1 cup sliced almonds
  • 1/4 teaspoon salt
  • 3 large eggs
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350°F and grease a large cookie sheet.
  2. In a large bowl, combine flour, sugar, baking powder, anise seed, sliced almonds, and salt. Blend using an electric mixer on low speed.
  3. In a separate bowl, whisk together eggs and vanilla extract.
  4. With the mixer running, slowly pour the egg mixture into the dry ingredients and mix just until the dough comes together. Do not overmix.
  5. Divide the dough in half and shape each half into a 12 x 2-inch log.
  6. Place the logs on the prepared cookie sheet and bake for 30 minutes or until slightly risen and firm to touch.
  7. Remove from oven and cool the logs on a wire rack for 15 minutes.
  8. Transfer logs to a cutting board and using a serrated knife, cut diagonally into 1/4-inch slices.
  9. Arrange the slices in a single layer on the cookie sheet and bake for 10 to 13 minutes or until crisp and golden.
  10. Cool the biscotti on the cookie sheet and store in a covered container.
