Ricotta doughnuts are soft, fluffy treats with a delicate cheese flavor, dusted with confectioners sugar, perfect for breakfast or dessert and loved by all ages.

Ingredients

  • 1 lb. ricotta cheese
  • 5 eggs
  • 5 Tbsp. sugar
  • 1 tsp. vanilla extract
  • 2 c. flour
  • pinch of salt
  • 4 tsp. baking powder
  • 2 c. oil for frying
  • confectioners sugar

Instructions

  1. Soften the ricotta cheese and beat the eggs into it.
  2. Add sugar and vanilla to the ricotta mixture.
  3. Stir in flour, salt, and baking powder until well combined.
  4. Heat oil in a deep skillet or fryer.
  5. Drop teaspoonfuls of dough into hot oil.
  6. Fry until golden brown, approximately 3 minutes per batch.
  7. Remove the doughnuts with a slotted spoon and drain on paper towels.
  8. Allow to cool slightly, then roll in confectioners sugar before serving.
