- Soften the ricotta cheese and beat the eggs into it.
- Add sugar and vanilla to the ricotta mixture.
- Stir in flour, salt, and baking powder until well combined.
- Heat oil in a deep skillet or fryer.
- Drop teaspoonfuls of dough into hot oil.
- Fry until golden brown, approximately 3 minutes per batch.
- Remove the doughnuts with a slotted spoon and drain on paper towels.
- Allow to cool slightly, then roll in confectioners sugar before serving.
