Anise Oat Buns

Ingredients

  • 2 c. skim milk
  • 1 1/3 c. oats
  • 2/3 c. rye flour
  • 2 tsp. crushed anise
  • 1/2 tsp. salt
  • 2 Tbsp. honey
  • 2 Tbsp. dry yeast
  • 1/4 c. to 1/2 c. water
  • 3 to 4 c. flour

Instructions

  1. Bring milk to boiling point and pour it over the oats, rye flour, crushed anise, salt and honey in a large bowl.
  2. Mix together.
  3. Cover the mixture with a clean towel or plastic wrap and let it cool to 98.6° C. (body temperature).
  4. Dissolve yeast in 1/4 to 1/2 cup lukewarm water and add to the mixture.
  5. Work in enough white flour to make dough solid enough to shape into buns.
  6. This dough is very sticky and cannot be kneaded.
  7. It needs no first rising.
