Ingredients

  • 3 cups sifted flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3 eggs
  • 1 3/4 cups sugar
  • 1 cup vegetable oil
  • 2 cups shredded zucchini
  • 1 teaspoon grated lemon rind
  • 2 teaspoons vanilla
  • 1/2 cup chopped walnuts

Instructions

  1. Sift together the dry ingredients: flour, salt, baking powder, soda, and cinnamon.
  2. In order, blend eggs, sugar, vegetable oil, shredded zucchini, grated lemon rind, and vanilla.
  3. Gradually blend the dry ingredients into the egg mixture until well combined.
  4. Fold in the chopped walnuts.
  5. Divide the batter evenly into two greased or parchment-lined loaf pans measuring approximately 8 1/2 x 4 1/2 x 2 1/2 inches.
  6. Bake at 350°F (175°C) for about 50 minutes or until a toothpick inserted into the center comes out clean.
