Ingredients

  • 1/2 cup regular rice
  • 1 quart milk
  • 1 tablespoon butter or margarine
  • 1/4 teaspoon vanilla
  • 1/2 teaspoon salt
  • 2 eggs, separated
  • 1 teaspoon vanilla
  • 1/4 cup sugar

Instructions

  1. Put rice, milk, and butter in a 1 1/2-quart baking dish.
  2. Bake uncovered in a 350°F oven for 1 hour, stirring occasionally.
  3. Stir in 3/4 cup sugar and salt.
  4. Return to oven and bake about 45 minutes more, stirring several times.
  5. Remove from oven and turn oven to 400°F.
