Ingredients

  • 10 oz. frozen chopped spinach
  • 1 beaten egg
  • 1/2 cup dairy sour cream
  • 1/4 cup milk
  • 2 tablespoons grated Parmesan cheese
  • 2 teaspoons minced dried onion
  • 1/2 teaspoon salt
  • dash of pepper
  • 2 cups shredded Monterey Jack or Cheddar cheese

Instructions

  1. Cook the spinach according to package directions; drain well.
  2. In a bowl, combine the beaten egg, sour cream, milk, 2 tablespoons Parmesan cheese, minced dried onion, salt, and pepper.
  3. Add shredded Monterey Jack or Cheddar cheese to the mixture and stir well.
  4. Fold in the drained spinach and cooked spaghetti until evenly coated.
  5. Transfer the mixture into an ungreased 10 x 6 x 2-inch baking dish.
  6. Sprinkle with the remaining 2 tablespoons Parmesan cheese on top.
  7. Bake, covered, at 350°F (175°C) for 15 minutes.
  8. Uncover and bake for an additional 15 to 20 minutes or until heated through.
