Ingredients

  • 6 oz. jar marinated artichoke hearts, chopped
  • green onions, chopped
  • 1 garlic clove, mashed
  • 4 eggs
  • 6 soda crackers, crumbled
  • salt
  • pepper
  • 1/2 lb. sharp Cheddar cheese, grated

Instructions

  1. Drain marinade from artichoke hearts into a skillet.
  2. Chop artichoke hearts and set aside.
  3. Add chopped green onions and mashed garlic to the skillet; sauté until onions are limp.
  4. In a bowl, beat eggs with a wire whisk.
  5. Add crumbled soda crackers, salt, and pepper to the eggs and mix.
  6. Stir in grated Cheddar cheese, chopped parsley, and chopped artichoke hearts.
  7. Pour the mixture into a buttered 8 x 8 x 2-inch pan.
  8. Bake at 325°F (163°C) for 35 to 40 minutes, until set.
  9. Let cool in the pan, then cut into bite-sized squares.
  10. Serve warm or cold.
