Ingredients

  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/3 cup shortening
  • 1/4 cup finely shredded Cheddar cheese
  • 2 to 3 tablespoons cold water

Instructions

  1. Combine flour and salt; cut into shortening.
  2. Stir in cheese. Sprinkle one tablespoon water over part of the mixture; toss gently with fork.
  3. Push aside the mixture.
  4. Repeat, adding enough of the water so entire mixture is moistened.
  5. Form into a ball.
  6. Roll dough into a 12 x 12-inch square on a lightly floured surface.
  7. Cut into 36 (2 x 2-inch) squares.
  8. Grease mini-muffin cups.
  9. Press dough squares into the cups, allowing points to stick up.
  10. Prick the dough with a fork.
  11. Bake at 400°F for 8 to 10 minutes or until golden in color.
  12. Remove shells from pans and cool on wire racks.
  13. Fill shells with egg, tuna and/or ham salad, or with hot or cold fillings of your choice.
