Ingredients

  • 1/2 cup milk
  • 1/4 cup oil
  • 1/2 cup apple butter
  • 1 egg
  • 4 tablespoons honey
  • 2 cups self-rising flour

Instructions

  1. Preheat oven to 425°F.
  2. Grease inside of 12 muffin cups.
  3. Combine milk, oil, apple butter, egg, and honey in a medium-sized bowl.
  4. Blend with an electric mixer on low speed until well mixed.
  5. Add self-rising flour and beat at low speed until flour is incorporated and lumps are gone.
  6. Spoon batter into muffin cups until each is about 3/4 full.
  7. Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow muffins to remain in the pan for 1 or 2 minutes before removing.
  9. Serve warm.
