Apple Butter Muffins

- Preheat oven to 425°F.
- Grease inside of 12 muffin cups.
- Combine milk, oil, apple butter, egg, and honey in a medium-sized bowl.
- Blend with an electric mixer on low speed until well mixed.
- Add self-rising flour and beat at low speed until flour is incorporated and lumps are gone.
- Spoon batter into muffin cups until each is about 3/4 full.
- Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
- Allow muffins to remain in the pan for 1 or 2 minutes before removing.
- Serve warm.
