Ingredients

  • 4 c. diced apples
  • 2 c. sugar
  • 2 c. flour
  • 1 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 2 eggs
  • 3/4 c. oil
  • 2 tsp. vanilla
  • 1 c. chopped nuts (optional)

Instructions

  1. Mix diced apples and sugar together (set aside).
  2. Sift dry ingredients together (set aside).
  3. Add beaten eggs to apple mixture.
  4. Add oil and vanilla; add flour mixture to apple mixture. Add nuts.
  5. Bake at 350° for 45 to 50 minutes.
  6. Keep refrigerated after baking.
