- Mix diced apples and sugar together (set aside).
- Sift dry ingredients together (set aside).
- Add beaten eggs to apple mixture.
- Add oil and vanilla; add flour mixture to apple mixture. Add nuts.
- Bake at 350° for 45 to 50 minutes.
- Keep refrigerated after baking.
