Ingredients

  • 3 eggs
  • 1 3/4 cups sugar
  • 3/4 cup vegetable oil or 1/2 cup applesauce
  • 1/4 cup oil
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 4 cups tart apples, peeled and sliced

Instructions

  1. Preheat oven to 350°F.
  2. Grease and flour a 9 x 13-inch pan.
  3. Beat eggs well in a large mixing bowl.
  4. Add sugar, vegetable oil or applesauce, oil, vanilla, baking soda, cinnamon, and salt to the eggs and mix well.
  5. Fold in the peeled and sliced tart apples until combined.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 45 to 60 minutes or until a toothpick inserted into the middle comes out clean.
  8. Allow to cool slightly before serving.
  9. Serve with vanilla ice cream or frozen yogurt.
