Apple Date Muffins(Low-Fat)

Ingredients

  • 3/4 c. whole wheat flour
  • 1/2 c. all-purpose flour
  • 1/2 c. wheat bran
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/3 c. chopped dates
  • 1 egg, lightly beaten
  • 1/4 c. packed brown sugar
  • 2 Tbsp. vegetable oil
  • 1 c. milk
  • 1 c. grated, peeled apple

Instructions

  1. In large bowl, combine whole wheat and all-purpose flours, bran, baking powder, baking soda and cinnamon; stir in dates.
  2. In another bowl, beat egg with sugar and oil; stir in milk and apple. Pour into flour mixture and stir just enough to moisten, being careful not to overmix.
