Ingredients

  • 1 cup flour
  • 3 tablespoons sugar, divided
  • 1/4 teaspoon salt
  • 1/2 cup plus 2 tablespoons butter or margarine, divided
  • 2 tablespoons ice water
  • 3 medium tart firm apples, peeled, quartered, cored and sliced thin
  • 2 tablespoons lemon juice
  • 1 teaspoon beaten egg
  • 1/2 cup apricot preserves

Instructions

  1. Combine flour, 1 tablespoon sugar and salt.
  2. Cut in 1/2 cup butter until particles resemble small peas.
  3. Sprinkle with ice water and mix lightly with a fork.
  4. Form dough into balls.
  5. Flatten into 6-inch circles, wrap and chill for at least 1½ hours until firm.
  6. Toss apples with lemon juice and the remaining 2 tablespoons sugar; set aside.
  7. Using a lightly floured stockinette-covered rolling pin, roll out pastry to 1/8-inch thickness on a cookie sheet.
  8. Place a 9-inch layer cake pan on the pastry.
  9. Cut around the edge with a knife or pastry wheel.
  10. Remove excess pastry and reserve.
  11. Prick the dough with a fork and bake in a preheated 400°F oven for 15 minutes or until golden.
  12. Cool on a cookie sheet on a rack.
