Instructions
- Mix diced apples and sugar together; let set for 1 hour.
- Sift dry ingredients (flour, baking soda, nutmeg, cinnamon) together.
- Beat eggs and add oil, vanilla, and the apple mixture.
- Add the flour mixture and chopped walnuts to the wet ingredients and mix well.
- Pour batter into a large greased Bundt pan.
- Bake in a preheated oven at 350°F (175°C) for 1 hour.
- Allow the cake to cool; sprinkle with confectioners' sugar if desired.
- Best made at least 1 day in advance because flavor is much better the second day.
