Ingredients

  • 4 cups diced apples
  • 2 cups sugar
  • 3 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 2 eggs
  • 1 cup cooking oil
  • 1 teaspoon vanilla
  • 1/2 cup chopped walnuts

Instructions

  1. Mix diced apples and sugar together; let set for 1 hour.
  2. Sift dry ingredients (flour, baking soda, nutmeg, cinnamon) together.
  3. Beat eggs and add oil, vanilla, and the apple mixture.
  4. Add the flour mixture and chopped walnuts to the wet ingredients and mix well.
  5. Pour batter into a large greased Bundt pan.
  6. Bake in a preheated oven at 350°F (175°C) for 1 hour.
  7. Allow the cake to cool; sprinkle with confectioners' sugar if desired.
  8. Best made at least 1 day in advance because flavor is much better the second day.
