Ingredients

  • vegetable cooking spray
  • 1 cup peeled, finely chopped apple
  • 1 tablespoon honey
  • 1 2/3 cups flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 egg
  • 2/3 cup skim milk
  • 3 tablespoons margarine

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Spray 12 muffin cups with vegetable cooking spray. Combine peeled, finely chopped apple and honey; set aside.
  3. In a large bowl, combine flour, sugar, baking powder, cinnamon, and salt; make a well in the center.
  4. In a separate bowl, beat the egg slightly. Mix in skim milk and melted margarine.
  5. Add the wet ingredients to the dry ingredients; stir just until moistened.
  6. Fold in the apple mixture.
  7. Spoon batter into muffin cups, filling each about two-thirds full.
  8. Bake at 400°F (200°C) for 18 minutes.
