Ingredients

  • 2 cups egg noodles
  • 4 cups thinly sliced apples
  • 3/4 cup sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 pound Ricotta cheese
  • 2 eggs
  • 3 tablespoons sugar
  • 1/3 cup honey

Instructions

  1. Mix the sliced apples, sugar, cinnamon, and nutmeg together in a large bowl.
  2. In a separate bowl, combine ricotta cheese, eggs, sugar, honey, and vanilla extract.
  3. Fold the cooked egg noodles into the cheese mixture.
  4. Spread half of the noodle and cheese mixture in a buttered 2-quart casserole dish.
  5. Top with the apple mixture and cover with the remaining cheese mixture.
  6. Dot the top with a tablespoon of butter.
  7. Bake at 350°F (175°C) for 50 minutes.
  8. Serve warm or cold.
