Ingredients

  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 1/4 cups peeled and shredded apple
  • 2/3 cup brown sugar
  • 1 1/2 teaspoons instant coffee crystals
  • 1 beaten egg
  • 3 tablespoons cooking oil
  • 1/4 cup chopped walnuts
  • Nonstick spray coating

Instructions

  1. Stir together flour, baking powder, and baking soda; then set aside.
  2. In a large bowl, combine peeled and shredded apple, brown sugar, and instant coffee crystals.
  3. Let stand for 5 minutes, stirring once.
  4. Add the beaten egg and cooking oil to the apple mixture.
  5. Mix well until combined.
  6. Stir in the flour mixture just until incorporated.
  7. Fold in chopped walnuts.
  8. Pour batter into a greased or nonstick spray-coated loaf pan.
  9. Bake at 350°F (175°C) for approximately 45 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool slightly before removing from the pan and serving.
