Ingredients

  • 1 egg
  • 2/3 cup apple juice or milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1 tablespoon baking powder
  • 1/2 tablespoon salt
  • 1/2 cup chopped nuts
  • 1 apple peeled and chopped
  • Domino sugar and cinnamon for sprinkling

Instructions

  1. In a bowl, beat the egg with apple juice (or milk), vegetable oil, and vanilla extract.
  2. Stir in the sifted all-purpose flour, white sugar, brown sugar, baking powder, and salt until just moistened, leaving the batter lumpy.
  3. Fold in chopped nuts and peeled, chopped apple.
  4. Divide the batter evenly into a greased muffin tin.
  5. Sprinkle with domino sugar and cinnamon on top if desired.
  6. Bake at 375°F (190°C) for about 20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow muffins to cool slightly before serving.
