Ingredients

- 2/3 cup apple juice or milk ⓘ
- 1/2 cup vegetable oil ⓘ
- 1 teaspoon vanilla extract ⓘ
- 2 cups all-purpose flour ⓘ
- 1/4 cup white sugar ⓘ
- 1/4 cup brown sugar ⓘ
- 1 tablespoon baking powder ⓘ
- 1/2 tablespoon salt ⓘ
- 1/2 cup chopped nuts ⓘ
- 1 apple peeled and chopped ⓘ
- Domino sugar and cinnamon for sprinkling ⓘ
Instructions
- In a bowl, beat the egg with apple juice (or milk), vegetable oil, and vanilla extract.
- Stir in the sifted all-purpose flour, white sugar, brown sugar, baking powder, and salt until just moistened, leaving the batter lumpy.
- Fold in chopped nuts and peeled, chopped apple.
- Divide the batter evenly into a greased muffin tin.
- Sprinkle with domino sugar and cinnamon on top if desired.
- Bake at 375°F (190°C) for about 20 minutes or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool slightly before serving.
