Ingredients

  • 8 C zucchini peeled and chopped
  • 2/3 C lemon juice
  • 1 C sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 4 C flour
  • 1 1/2 C sugar
  • 1 1/2 C butter or margarine

Instructions

  1. Cook zucchini and lemon juice together until tender.
  2. Add 1 cup sugar, 1 teaspoon cinnamon, and the nutmeg to the zucchini mixture. Simmer for 1 minute.
  3. Set aside.
