Ingredients

  • 2 medium acorn squash
  • 1/2 cup water
  • 1/4 cup butter
  • 1 large cooking apple
  • 1/3 cup packed brown sugar
  • 1/4 teaspoon cinnamon
  • 2 teaspoons vanilla
  • 2 tablespoons chopped pecans

Instructions

  1. Preheat oven to 400°F.
  2. Place the acorn squash halves cut side up in a 13 x 9-inch baking pan.
  3. Pour water into the pan.
  4. Cover the pan with foil.
  5. Bake for 40 to 50 minutes or until the squash is tender.
  6. In an 8-inch skillet, melt the butter over medium heat.
  7. Stir in the chopped apple, brown sugar, cinnamon, and vanilla.
  8. Cook for 3 to 4 minutes, stirring frequently.
  9. Spoon the apple mixture into the baked squash halves.
  10. Sprinkle with chopped pecans before serving.
