Tasty Whipped Squash
A comforting, naturally sweet mashed squash dish with hints of brown sugar, raisins, and nutmeg, perfect for cozy family dinners or holiday gatherings.

- Cut the squash in half lengthwise; remove the seeds.
- Place the squash halves cut side down in shallow baking pans and add 1/2-inch water.
- Cover the pans and bake at 400°F for 40 minutes or until the squash is tender.
- Drain the cooked squash; scoop out the pulp and discard the shells.
- In a mixing bowl, combine the squash pulp with 2 tablespoons of softened butter or margarine, 2 tablespoons of brown sugar, golden raisins, salt, nutmeg, and pepper.
- Mash or beat until smooth and well blended.
- Transfer to a serving dish, top with 1 tablespoon of butter or margarine and 1 tablespoon of brown sugar if desired, and serve warm.
