Tasty Whipped Squash

Ingredients

  • 5 lb. butternut or hubbard squash
  • 2 Tbsp. butter or margarine, softened
  • 2 Tbsp. brown sugar
  • 1/3 cup golden raisins
  • 1/2 tsp. salt
  • 1/4 tsp. ground nutmeg
  • 1/8 tsp. pepper
  • 1 Tbsp. butter or margarine
  • 1 Tbsp. brown sugar

Instructions

  1. Cut the squash in half lengthwise; remove the seeds.
  2. Place the squash halves cut side down in shallow baking pans and add 1/2-inch water.
  3. Cover the pans and bake at 400°F for 40 minutes or until the squash is tender.
  4. Drain the cooked squash; scoop out the pulp and discard the shells.
  5. In a mixing bowl, combine the squash pulp with 2 tablespoons of softened butter or margarine, 2 tablespoons of brown sugar, golden raisins, salt, nutmeg, and pepper.
  6. Mash or beat until smooth and well blended.
  7. Transfer to a serving dish, top with 1 tablespoon of butter or margarine and 1 tablespoon of brown sugar if desired, and serve warm.
