Ingredients

  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup chopped walnuts
  • 1 1/2 cups sugar
  • 1 cup vegetable oil
  • 2 teaspoons vanilla
  • 2 eggs
  • 2 cups peeled chopped tart apples

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 10-inch tube pan.
  2. Sift together the flour, baking soda, salt, and cinnamon in a large bowl.
  3. Stir in the chopped walnuts and set aside.
  4. Combine the sugar, vegetable oil, vanilla, and eggs in a separate bowl.
  5. Stir in the peeled, chopped tart apples into the wet mixture.
  6. Pour the apple mixture into the flour mixture and stir just until moistened; the batter will be stiff.
  7. Spoon the batter into the prepared tube pan and spread evenly.
  8. Bake in the preheated oven for about 1 hour, or until a toothpick inserted in the center comes out clean.
  9. Cool the cake in the pan on a wire rack for 10 to 15 minutes.
  10. Remove from the pan and cool completely on the wire rack.
  11. Sprinkle with powdered sugar before serving.
