Apple Roll Cake

Ingredients

  • 1 c. sugar
  • 1 egg
  • 4 level tsp. baking powder
  • raisins
  • melted butter
  • sliced apples
  • 1/2 c. shortening
  • 3 c. flour
  • 1/2 tsp. salt
  • milk
  • nuts
  • cinnamon

Instructions

  1. Cream shortening, sugar and egg.
  2. Combine flour, powder and salt.
  3. Mix alternately with enough milk to moisten (like biscuit dough).
  4. Roll 1/2-inch thick.
  5. Spread with raisins, thin sliced apples and nuts.
  6. Sprinkle on some sugar, cinnamon and melted butter.
  7. Roll like jelly roll.
  8. Use waxed paper to help roll.
  9. Bake in 350° oven for 30 minutes.
  10. Ice with thin icing when cold.
