Ingredients

  • 4 c. diced apples
  • 1 c. chopped pecans
  • 2 c. sugar
  • 3 c. flour
  • 2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 tsp. allspice
  • 1/4 tsp. nutmeg
  • 3/4 tsp. cinnamon
  • 1 c. melted butter
  • 2 tsp. vanilla
  • 2 eggs

Instructions

  1. Stir together diced apples, chopped pecans, and sugar. Let stand, stirring often, until juicy, about 1 hour.
  2. Stir together flour, baking soda, salt, allspice, and nutmeg.
  3. Add apple mixture to the flour mixture and stir well.
  4. Stir in melted butter and vanilla.
  5. Add eggs and mix until combined.
  6. Divide the batter evenly into two greased and floured one-pound coffee cans.
  7. Tie a 2-inch wide band of double foil around the top of each can.
  8. Bake at 325°F (163°C) for 1 hour and 15 minutes.
