Ingredients

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 3/4 cups sugar
  • 1 cup oil
  • 4 to 5 apples, pared and cut small
  • 1 1/2 cups chopped nuts

Instructions

  1. Sift together the flour, baking soda, cinnamon, and salt; set aside.
  2. In a mixing bowl, beat together the eggs and sugar until well blended.
  3. Add the oil and beat well.
  4. Add the dry ingredients to the wet mixture.
  5. Mix thoroughly but do not overbeat. Fold in the chopped apples and nuts.
  6. Pour the batter into a well-greased 11 x 15-inch sheet cake pan.
  7. Bake at 350°F (175°C) for 45 minutes or until a toothpick inserted into the center comes out clean.
