Ingredients

  • 1 Tbsp. vegetable oil
  • 5 eggs
  • 1 large chopped onion
  • 3/4 lb. grated Cheddar cheese
  • 1 (10 oz.) pkg. frozen spinach

Instructions

  1. Thaw the frozen spinach and squeeze out excess moisture.
  2. Saute the chopped onion in vegetable oil until translucent.
  3. Add the spinach to the onion and cook until any remaining moisture evaporates. Let cool.
  4. Beat the eggs in a bowl and stir in the grated Cheddar cheese.
  5. Combine the egg and cheese mixture with the cooled spinach and onion.
  6. Pour the mixture into a greased 9-inch pie plate or quiche pan.
  7. Bake in a preheated oven at 350°F (175°C) for 40 to 45 minutes until set and golden.
