Ingredients

  • 2 cups flour
  • 2 cups brown sugar
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 3 eggs
  • 1 cup oil
  • 3 cups peeled, chopped apples
  • 2 tablespoons molasses
  • 1 tablespoon vanilla
  • 2 teaspoons cinnamon
  • 1 1/2 teaspoons nutmeg
  • 1/2 teaspoon allspice
  • confectioners sugar

Instructions

  1. Combine the sugars, salt, and flour in a bowl until well blended.
  2. Add oil, eggs, molasses, and vanilla to the mixture.
  3. Beat the mixture well until smooth.
  4. Add all the spices and continue to beat for 2 minutes.
  5. Fold in the chopped apples.
  6. Pour the batter into a lightly greased 9 x 13-inch baking pan.
  7. Bake at 350°F (175°C) for 55 to 60 minutes.
  8. Remove from oven and allow to cool slightly.
  9. Dust the top of the cake lightly with confectioners sugar before serving.
