Apple Turkey Loaf

Ingredients

  • 1 tablespoon margarine
  • 2 tart apples, such as Granny Smith, peeled, cored and chopped
  • 1 medium onion, chopped
  • 1 1/2 lbs turkey breast, skinned and ground
  • 1 1/2 teaspoons dried marjoram
  • 1 teaspoon dried thyme
  • 1 teaspoon sage
  • 1 teaspoon black pepper
  • 1/2 cup parsley, chopped
  • 2 egg whites
  • 1/2 cup dry breadcrumbs
  • 1/2 cup nonfat milk

Instructions

  1. Preheat oven to 350 degrees.
  2. Melt margarine in 12 inch skiller over medium heat. Add apples and onion. Cook until onion is soft, about 10 minutes.
  3. Let cool, scrape into a large bowl and mix in turkey and all the spices, parsley, egg whites, bread crumbs and milk. Pat into a 9x5 loaf pan. Bake til brown on top and no longer pink, about 1 hour.
  4. Drain fat from loaf pan, invert pan and turn loaf onto a platter.
