Ingredients

  • 2 cups water
  • 2 cups raisins
  • 1 cup unsweetened applesauce
  • 2 eggs
  • 2 tablespoons liquid sweetener
  • 3/4 cup cooking oil
  • 1 teaspoon soda
  • 2 cups flour
  • 1 1/4 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt

Instructions

  1. Cook raisins in water until soft.
  2. Drain the raisins.
  3. Add applesauce, eggs, sweetener, and oil to the raisins and mix well.
  4. Blend in baking soda and flour until smooth.
  5. Add the remaining ingredients (cinnamon, nutmeg, vanilla, salt) and mix well.
  6. Pour batter into a greased 9 x 12-inch pan.
  7. Bake at 350°F for 30 to 40 minutes or until a toothpick inserted in the center comes out clean.
