Applescotch Pie

- Mix sliced tart apples, brown sugar, water, and lemon juice in a saucepan. Cover and cook slowly until apples are just tender, about 7 to 8 minutes.
- Blend flour and granulated sugar together.
- Add the flour and sugar mixture to the cooked apples.
- Cook uncovered, stirring, until the syrup thickens, about 2 minutes. Remove from heat.
- Add vanilla, salt, and butter to the apple mixture and stir until well combined. Cool the filling.
- Pour the cooled apple filling into a pastry-lined pie pan.
- Cover with a top crust that has slits cut in it, then seal and flute the edges.
- Bake at 425°F (220°C) for 40 to 45 minutes or until the crust is nicely browned.
