Apricot Bread Pudding

A comforting bread pudding with sweet apricots and raisins, infused with vanilla and apricot jam, perfect for dessert or a cozy brunch treat.

Ingredients

  • 1/2 cup raisins
  • 5 dried apricots, cut into quarters
  • 6 slices bread (preferably egg bread)
  • 1/2 cup butter (at room temperature)
  • 6 eggs
  • 3/4 cup sugar
  • 3 cups milk (hot)
  • 2 teaspoons vanilla extract
  • 1/2 cup apricot jam or jelly

Instructions

  1. Place raisins and apricots in a bowl.
  2. Cover with boiling water and soften for 10 minutes.
  3. Drain well.
  4. Sprinkle half the fruit in the bottom of a buttered 8-inch square baking dish.
  5. Butter the bread slices and arrange them, buttered side up, on top of the fruit, overlapping if necessary.
  6. Sprinkle with the remaining fruit.
