Ingredients

  • 1 c. butter
  • 2/3 c. sugar
  • 2 egg yolks
  • 1 tsp. vanilla
  • 2 c. flour
  • 1 tsp. salt
  • chopped walnuts
  • apricot jam

Instructions

  1. Blend together the butter, sugar, egg yolks, vanilla, flour, and salt until well combined.
  2. Shape the dough into walnut-sized balls.
  3. Dip each ball in the reserved egg whites.
  4. Roll the dipped balls in chopped walnuts to coat.
  5. Place the coated balls on a cookie tray and press your thumb into the center of each to create a small indentation.
  6. Bake at 325°F (163°C) for about 15 minutes or until lightly golden.
  7. Allow the cookies to cool completely, then fill the centers with apricot jam.
