- In a saucepan, place apricots with enough water to cover.
- Bring just to a simmer; reduce heat and simmer, covered, until apricots are tender (10 to 15 minutes).
- Drain the apricots, reserving the liquid.
- Dissolve the gelatin in hot liquid (apricot cooking water plus boiling water).
- In a mixing bowl, beat the cream cheese until smooth.
- Add the drained crushed pineapple and chopped walnuts to the cream cheese and mix well.
- Pour the hot gelatin mixture into the cream cheese mixture and stir until combined.
- Pour the mixture into a mold or serving dish and refrigerate until set (about 2-3 hours).
