Apricot Nut Salad

A vibrant and sweet apricot nut salad combining tender dried apricots, pineapple, walnuts, and creamy gelatin, perfect for light desserts or refreshing gatherings.

Ingredients

  • 8 oz. dried apricots
  • 1/2 c. sugar
  • 1 (3 oz.) pkg. apricot or orange gelatin
  • 1 c. hot liquid (apricot cooking water plus boiling water)
  • 1 (3 oz.) pkg. cream cheese
  • 1 (8 1/4 oz.) can crushed pineapple, drained
  • 1/4 c. chopped walnuts

Instructions

  1. In a saucepan, place apricots with enough water to cover.
  2. Bring just to a simmer; reduce heat and simmer, covered, until apricots are tender (10 to 15 minutes).
  3. Drain the apricots, reserving the liquid.
  4. Dissolve the gelatin in hot liquid (apricot cooking water plus boiling water).
  5. In a mixing bowl, beat the cream cheese until smooth.
  6. Add the drained crushed pineapple and chopped walnuts to the cream cheese and mix well.
  7. Pour the hot gelatin mixture into the cream cheese mixture and stir until combined.
  8. Pour the mixture into a mold or serving dish and refrigerate until set (about 2-3 hours).
