Ingredients

  • 2 c. quick cooking oats
  • 1 3/4 c. all-purpose flour
  • 3/4 c. dark brown sugar, firmly packed
  • 1 1/2 tsp. cinnamon
  • 1 c. butter
  • 1 c. apricot preserves

Instructions

  1. Butter a 9 x 13 x 2-inch baking pan.
  2. In a large bowl, combine quick cooking oats, all-purpose flour, dark brown sugar, and cinnamon; mix well.
  3. Add butter and work in with fingers until the mixture is crumbly.
  4. Set 2 cups of the oat mixture aside.
  5. Press the remaining oat mixture onto the bottom of the prepared pan.
  6. Spread apricot preserves evenly over the oat crust.
  7. Crumble the reserved oat mixture over the preserves and pat gently but firmly.
  8. Bake at 400°F for 20 minutes until golden.
  9. Cool completely, then cut into small squares.
