Apricot Oat Squares

- Butter a 9 x 13 x 2-inch baking pan.
- In a large bowl, combine quick cooking oats, all-purpose flour, dark brown sugar, and cinnamon; mix well.
- Add butter and work in with fingers until the mixture is crumbly.
- Set 2 cups of the oat mixture aside.
- Press the remaining oat mixture onto the bottom of the prepared pan.
- Spread apricot preserves evenly over the oat crust.
- Crumble the reserved oat mixture over the preserves and pat gently but firmly.
- Bake at 400°F for 20 minutes until golden.
- Cool completely, then cut into small squares.
