Ingredients

  • 4 center cut pork chops (about 1-inch thick)
  • 1/2 tsp salt
  • 1/3 cup apricot preserves
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard

Instructions

  1. Mix apricot preserves, lemon juice, and Dijon mustard together in a bowl.
  2. Grease a baking dish.
  3. Sprinkle salt on both sides of the pork chops.
  4. Arrange the pork chops in the prepared baking dish.
  5. Spoon the apricot mixture over the pork chops, turning to coat evenly.
  6. Place in a 425°F oven and bake for 20 to 25 minutes or until cooked through.
  7. Serve with pan juices.
