Ingredients

  • 1/4 cup vegetable oil
  • 1/2 cup molasses
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon apple pie spice
  • 1/4 teaspoon salt
  • 3/4 cup raisins
  • 3/4 cup chopped dried apricots
  • 1 1/4 cups peeled, grated apples
  • vegetable cooking spray

Instructions

  1. Combine vegetable oil, molasses, egg, and vanilla in a mixing bowl and set aside.
  2. In a separate bowl, mix flour, baking powder, apple pie spice, and salt.
  3. Add the dry ingredients to the molasses mixture, stirring well to combine.
  4. Stir in raisins, chopped dried apricots, and grated apples.
  5. Spread the mixture in a 9-inch square pan coated with vegetable cooking spray.
  6. Bake at 350°F for 20 minutes or until done.
  7. Let cool, then cut into 1 1/2-inch squares.
