Ingredients

  • 1 qt. flour
  • 1 tsp. salt
  • 1 Tbsp. sugar
  • 2 heaping tsp. baking powder
  • 1 1/2 pt. cold water

Instructions

  1. Gather and steep lungwort lichen overnight in lukewarm water to act as yeast.
  2. In the morning, add enough flour to create a good batter from the leavened mixture.
  3. Place the sponge in a warm place and cover with a cloth to rise.
  4. By evening, the dough will have risen. Save some of the leaven for future use.
  5. Leaven the dough overnight and bake the next morning. Do not freeze the bread.
