Ingredients

  • 4 squirrels, cut into pieces
  • 1 stick margarine
  • 1 cup chopped onions
  • 1/2 cup chopped green bell peppers
  • 4 cloves garlic
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup Burgundy wine
  • 1 tablespoon chopped green onion tops
  • 1 tablespoon chopped parsley
  • 1 (4 oz) can mushrooms
  • 1 tablespoon flour
  • salt
  • pepper
  • crushed red pepper

Instructions

  1. Cut squirrels into 8 pieces each and season with salt and pepper.
  2. Melt margarine in a large pot and fry squirrel pieces until brown or starting to stick to the pot.
  3. Add chopped onions, green bell peppers, and garlic to the pot.
  4. When vegetables are soft, add a small amount of cold water and Worcestershire sauce.
  5. Cover the pot and simmer for 1 hour.
  6. Stir well and add Burgundy wine.
  7. Cook until the squirrel meat is tender.
