Ingredients

  • 1 c. pea beans, soaked overnight and drained
  • 1 Tbsp. oil
  • 1/4 lb. bacon, diced
  • 4 carrots, diced
  • 5 to 6 medium leeks, diced
  • bouquet garni
  • 1 clove garlic, crushed
  • salt and pepper
  • 8 c. stock
  • 1 small head green cabbage, shredded

Instructions

  1. Simmer the soaked and drained pea beans in half of the stock, covered, for 2 hours.
  2. If all the stock is absorbed during cooking, add water to keep the pan moist.
  3. In a separate large pot, heat the oil and cook the diced bacon until crispy.
  4. Add the diced carrots, leeks, crushed garlic, and bouquet garni to the bacon, and cook until vegetables are tender.
  5. Pour in the remaining stock and bring to a boil.
  6. Add the shredded green cabbage and simmer until all vegetables are cooked through and flavors meld.
