Athenaeum Rolls are soft, buttery yeast rolls with a light texture and rich flavor, perfect for breakfast, brunch, or as a side for any meal.

Instructions
- Add the solid vegetable shortening to the scalded milk and mix well.
- Dissolve the yeast cakes in warm water and add to the milk mixture.
- Add the slightly beaten egg, salt, flour, and 1/2 cup of sugar to the yeast mixture.
- Mix all ingredients thoroughly until well combined.
- Allow the dough to rise until doubled in bulk, about 2 hours.
- Shape the dough into cloverleaf or desired shapes, using melted butter in forming the rolls.
- Let the shaped rolls rise until doubled in bulk, about 45 minutes to an hour.
- Bake the rolls in a preheated oven at 400°F (200°C) for 10 to 15 minutes until golden brown.
