Ingredients

  • 2 cups white sugar
  • 1 cup evaporated milk
  • pinch of baking soda
  • 2 cups pecans
  • 1/2 stick butter

Instructions

  1. Heat 1 cup of sugar and the evaporated milk in a heavy pan.
  2. Meanwhile, melt the remaining 1 cup of sugar separately.
  3. Combine the two mixtures in the heavy pan.
  4. Add a pinch of baking soda carefully, as it will cause boiling.
  5. Immediately add the pecans to the mixture.
  6. Boil the mixture slowly until it reaches 237°F on a candy thermometer.
  7. Remove from heat and beat the mixture by hand.
  8. Add the half stick of butter and stir until incorporated.
  9. Pour the mixture onto a greased surface to harden.
  10. Allow to cool and harden completely.
  11. Break into pieces and enjoy.
