- Heat 1 cup of sugar and the evaporated milk in a heavy pan.
- Meanwhile, melt the remaining 1 cup of sugar separately.
- Combine the two mixtures in the heavy pan.
- Add a pinch of baking soda carefully, as it will cause boiling.
- Immediately add the pecans to the mixture.
- Boil the mixture slowly until it reaches 237°F on a candy thermometer.
- Remove from heat and beat the mixture by hand.
- Add the half stick of butter and stir until incorporated.
- Pour the mixture onto a greased surface to harden.
- Allow to cool and harden completely.
- Break into pieces and enjoy.
