- Heat oven to 350°F (175°C).
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl.
- Press the crumb mixture into the bottom of a 9-inch spring-form pan to form the crust.
- In a separate bowl, beat the cream cheese and remaining 1 cup of sugar until smooth.
- Add eggs one at a time, beating just to blend after each addition.
- Mix in vanilla extract.
- Fold in sour cream thoroughly.
- Pour the batter into the prepared crust in the pan.
- Place the cheesecake on the center rack of the oven.
- Fill a small pan with water and place it on the bottom rack of the oven.
- Bake for 30 minutes, then turn off the oven and leave the cheesecake inside for 1 hour.
- Do not open the oven door during this time.
- Remove the cheesecake from the oven and let it cool.
