Ingredients

  • 1 1/2 cup graham cracker crumbs
  • 1 1/4 cup sugar
  • 5 1/2 tablespoon butter, melted
  • 2 (8 oz.) packages cream cheese, room temperature
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 pint sour cream

Instructions

  1. Heat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl.
  3. Press the crumb mixture into the bottom of a 9-inch spring-form pan to form the crust.
  4. In a separate bowl, beat the cream cheese and remaining 1 cup of sugar until smooth.
  5. Add eggs one at a time, beating just to blend after each addition.
  6. Mix in vanilla extract.
  7. Fold in sour cream thoroughly.
  8. Pour the batter into the prepared crust in the pan.
  9. Place the cheesecake on the center rack of the oven.
  10. Fill a small pan with water and place it on the bottom rack of the oven.
  11. Bake for 30 minutes, then turn off the oven and leave the cheesecake inside for 1 hour.
  12. Do not open the oven door during this time.
  13. Remove the cheesecake from the oven and let it cool.
