Ingredients

  • 2 1/4 cups flour
  • 1 1/4 cups sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 1/2 cup shortening
  • 2 eggs
  • 1 cup ripe bananas
  • 1 teaspoon vanilla
  • 1/2 cup sour milk

Instructions

  1. To sour milk, combine 1 tablespoon vinegar with enough milk to measure 1/2 cup. Let stand for 5 minutes.
  2. Preheat oven and prepare a loaf pan.
  3. In a large bowl, combine flour, sugar, baking powder, salt, and baking soda.
  4. Cream together shortening and eggs until smooth.
  5. Stir in mashed ripe bananas and vanilla.
  6. Add the sour milk gradually to the creamed mixture, mixing well.
  7. Combine wet and dry ingredients, stirring until just blended.
  8. Pour batter into the prepared loaf pan.
  9. Bake at 350°F (175°C) for approximately 60 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool in the pan for 10 minutes, then turn out onto a wire rack.
