Ingredients

  • 1/2 cup flour
  • 2 cups confectioners sugar
  • 1/2 teaspoon baking powder
  • 1/2 cup egg whites, beaten stiff
  • 2 cups chopped walnuts
  • 1/2 cup chopped dried apricots

Instructions

  1. Preheat oven to 325°F (160°C). Grease a cookie sheet or line with parchment paper.
  2. Combine confectioners sugar, flour, baking powder, and beaten egg whites in a mixing bowl.
  3. Add chopped walnuts and dried apricots to the mixture.
  4. Mix well until all ingredients are evenly combined.
  5. Drop teaspoon-sized portions of the batter onto the prepared cookie sheet, spacing them apart.
  6. Bake in the preheated oven for 15 to 18 minutes until cookies are lightly golden.
  7. Remove from oven and let cool before serving.
