Ingredients

  • 1 (9-inch or 10-inch) baked pie crust
  • 3/4 cup coconut, packed
  • 1/4 cup cornstarch
  • 1/3 cup flour
  • 2/3 cup sugar
  • 1/4 teaspoon salt
  • 2 cups milk, scalded
  • 3 egg yolks
  • 2 tablespoons butter
  • 1 teaspoon vanilla
  • 3/4 cup walnuts, chopped
  • 1 banana
  • 3/4 cup sweetened pineapple, drained

Instructions

  1. Bake the pie crust in a deep pie plate and set aside.
  2. Toast 3/4 cup packed coconut in a 350°F oven until light brown, watching closely, then set aside.
  3. In a saucepan, combine cornstarch (or flour), sugar, and salt.
  4. Gradually add scalded milk, stirring constantly until mixture thickens.
  5. In a separate bowl, beat egg yolks, then slowly add to the hot mixture, stirring constantly.
  6. Cook for a few more minutes until smooth and thickened.
  7. Remove from heat and stir in butter and vanilla.
  8. Chop walnuts and slice banana; drain pineapple and reserve 3 Tbsp. juice.
  9. Fold in walnuts, banana slices, pineapple, and reserved juice into the custard.
  10. Pour filling into the baked pie crust.
  11. Whip the cream until stiff peaks form and spread over the pie.
  12. Chill the pie before serving.
