Ingredients

  • 3 cups sugar
  • 1 cup cream
  • 1/8 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 pound pecans
  • 1/4 cup butter

Instructions

  1. Melt butter and 1 cup sugar in a heavy iron skillet.
  2. Pour slowly over remaining sugar and cream.
  3. Cook to a firm boil stage (246°F), stirring constantly to prevent burning.
  4. Remove from heat. Add baking soda and stir.
  5. Add butter and cool for 10 minutes. Add vanilla and beat until stiff.
  6. Blend in pecans.
  7. Pour into a greased pan and cut into squares.
