Cinnamon Squash Rings

Sweet and spicy cinnamon squash rings feature tender acorn squash slices coated in cinnamon breading, baked to perfection. Perfect as a flavorful side or unique vegetarian main.

Ingredients

  • 2 Tbsp. brown sugar
  • 2 Tbsp. milk
  • 1 egg
  • 3/4 c. soft bread crumbs
  • 1/4 c. yellow or white cornmeal
  • 2 Tbsp. ground cinnamon
  • 1 large acorn squash

Instructions

  1. Preheat oven to 400°F.
  2. Mix brown sugar, milk, and egg in a bowl.
  3. Combine bread crumbs, cornmeal, and cinnamon in another bowl.
  4. Dip squash slices into the egg mixture, then coat with the bread crumb mixture.
  5. Place coated squash slices in an ungreased baking pan.
  6. Drizzle with margarine.
  7. Bake for 30 to 35 minutes until the squash is soft.
