Authentic Irish cabbage rolls feature tender cabbage leaves filled with seasoned ground beef, rice, and onions, simmered in a tangy tomato and sauerkraut sauce, perfect for hearty family meals.

Ingredients

  • 1 medium-sized cabbage
  • 1 1/2 lb ground beef
  • 1 large onion
  • 1/2 cup Minute rice
  • salt and pepper
  • 1 egg
  • 1 large can sauerkraut
  • 1 large can tomatoes
  • 1 cup tomato juice

Instructions

  1. Remove the core from the cabbage as much as possible.
  2. Boil the whole cabbage until it is soft enough to roll the leaves, but not fully cooked.
  3. Peel off the leaves one at a time.
  4. Mix ground beef, fine-cut onion, Minute rice, beaten egg, salt, and pepper to make the filling.
  5. Place a portion of the filling onto each cabbage leaf and roll up securely.
  6. In a large pot, combine the canned sauerkraut, canned tomatoes, and tomato juice.
  7. Arrange the cabbage rolls in the sauce, cover, and simmer until cooked through, about 45-60 minutes.
