- Cream shortening and sugar until light and fluffy; beat in eggs.
- Sift together flour, baking powder, soda, and salt; add alternately with coarsely grated, peeled apples to the egg mixture.
- Stir in lemon rind and chopped walnuts.
- Pour batter into a greased and floured 9 x 5 x 3-inch loaf pan.
- Bake at 350°F (175°C) for 50 to 60 minutes until a toothpick inserted into the center comes out clean.
- Cool before slicing.
