Ingredients

  • 1/4 cup shortening
  • 2/3 cup sugar
  • 2 eggs
  • 2 cups sifted flour
  • 1 teaspoon baking powder
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 2 cups raw apples
  • 1 tablespoon lemon rind
  • 2/3 cup chopped walnuts

Instructions

  1. Cream shortening and sugar until light and fluffy; beat in eggs.
  2. Sift together flour, baking powder, soda, and salt; add alternately with coarsely grated, peeled apples to the egg mixture.
  3. Stir in lemon rind and chopped walnuts.
  4. Pour batter into a greased and floured 9 x 5 x 3-inch loaf pan.
  5. Bake at 350°F (175°C) for 50 to 60 minutes until a toothpick inserted into the center comes out clean.
  6. Cool before slicing.
